Breakfast Quinoa

I've been trying to get to the gym during the day (on my lunch break) so I have some more free time at night. However, I noticed I need a bigger breakfast to get me through a daytime workout. I've been wanting to try quinoa for breakfast for quite sometime. I really enjoy quinoa in a savory dish so thought I'd give it a try in this sweet breakfast dish. 

I'm a huge fan of oatmeal, especially steel cut oats, so I really thought I'd like this dish more than I did. It was really easy to put together (aside from the boiling milk over the pot, my bad!) .  The flavor was really good. I just struggled with the consistency/texture. I was hoping for it to be creamier. What are your thoughts on quinoa for breakfast?  I think I'll give it a try again. Don't let me turn you away from it, Nadya was a fan!


Breakfast Quinoa: Martha Stewart Living, February 2010

2 cups whole or low-fat milk, plus more for serving
1 cup quinoa, rinsed
3 tablespoons light-brown sugar, plus more for serving
1/8 teaspoon ground cinnamon, plus more for serving
1 cup (1/2 pint) fresh blueberries, plus more for serving
Bring milk to a boil in a small saucepan. Add quinoa, and return to a boil. Reduce heat to low, and simmer, covered, until three-quarters of the milk has been absorbed, about 15 minutes.
Stir in sugar and cinnamon. Cook, covered, until almost all the milk has been absorbed, about 8 minutes. Stir in blueberries, and cook for 30 seconds. Serve with additional milk, sugar, cinnamon, and blueberries.

Crustless Broccoli-Cheddar Quiches


I'm sure I've mentioned this before but breakfast for dinner is one of my favorites! I actually prefer it rather than having breakfast at breakfast...silly me! When this picture popped up on my Martha iPhone app, I knew I wanted to make it!  Then after reading the ingredients, I knew I had to make it! Eggs, cheese, broccoli...yes, please! And let's be honest, I really love using my ramekins any chance I get! There's something about individualize portions that really tickles me.

This meal was really simple and really tasty. Perfect for breakfast, brunch, or dinner. You can mix it up to your liking too; spinach would be tasty! If you don't have ramekins,  you can bake it in a larger dish. It just might need a little extra time.

Ingredients

  • Butter, for ramekins
  • Coarse salt
  • 1 package (10 ounces) frozen broccoli florets
  • 6 large eggs
  • 1/2 cup half-and-half
  • Ground pepper
  • 1/8 teaspoon ground nutmeg
  • 3/4 cup shredded cheddar cheese (3 ounces)
  • Crusty bread and mixed salad (optional)
Preheat oven to 350 degrees. Butter four 8-ounce ramekins (or a 9-inch pie dish); set aside. Bring a medium pot of salted water to a boil. Add broccoli; cook 1 minute. Drain well; transfer to a cutting board, and blot dry with paper towels. Chop coarsely. 
In a large bowl, whisk together eggs, half-and-half, 1/2 teaspoon salt, 1/4 teaspoon pepper, and nutmeg. Stir in broccoli and cheese.
Place ramekins on a rimmed baking sheet. Ladle broccoli mixture into ramekins, dividing evenly. Bake until golden brown, 35 to 40 minutes. Serve with crusty bread and a mixed-green salad, if desired.

Spinach & Cheese Strata

I've been thinking about what to make for Easter for the last week or two. Easter is a tricky holiday for me because I don't eat a lot of meat traditionally cooked on Easter (i.e., ham, lamb, pork). So I thought maybe I'll do something Italian, after all, my family always has manicotti with their ham on Easter. Somehow it clicked that I was meant to make brunch instead of dinner for Easter. I'm happy I had this idea because,in my opinion, everything turned out really well. 

Strata is a perfect dish to make when you're looking to have everything done ahead of time. Strata needs to sit for at least 8hrs in the refrigerator prior to baking. There are so many things you can do with strata. I found this recipe while browsing tastespotting for breakfast/brunch ideas. The recipe comes from February 2003 issue of Gourmet Magazine. This recipe had great reviews and after making it I couldn't agree more!

You can find the recipe below. I used 16 oz of spinach and omitted the Dijon mustard. After reading some reviews, I gathered that the mustard flavor was too powerful in this dish. Feel free to add it in and let me know your thoughts. Keep this recipe in mind for your next brunch.

Ingredients: 
1 (10-oz) package frozen spinach, thawed
1 1/2 cups finely chopped onion (1 large)
3 tablespoons unsalted butter
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon freshly grated nutmeg
8 cups cubed (1 inch) French or Italian bread (1/2 lb)
6 oz coarsely grated Gruyère (2 cups)
2 oz finely grated Parmigiano-Reggiano (1 cup)
2 3/4 cups milk
9 large eggs
2 tablespoons Dijon mustard
