I finally discovered the trick to the perfect breakfast potato and I couldn't be happier. Potatoes and I had a love/hate relationship prior to this recipe. I think a breakfast isn't complete without potatoes. I would always get potatoes that were crispy on the outside yet not so soft on the inside or soft on the inside but way too crispy on the outside.
